Yuta's mom shows us a bamboo shoot she picked in the morning.

Nozawa Onsen, Japan - May 2019: Yuta's mom hikes the mountain to pick young bamboo to make into soba; and harvest vines which are then woven into baskets, lampshades, plates and other beautiful pieces. She then makes Soba with mountain vegetables (saisan). Saisan are picked locally as are young bamboo shoots which are then peeled and boiled in soba soup. These are a speciality of Nozawa, a village in the Japanese Alps that has 13 free public hot spring baths scattered throughout the town. (Photo © Ann Summa).
